On Day 2, I did manage to get home after work and put something together using that DAMN CHICKEN!

I kept it simple and made chicken salad. I made it different than I ever had by using cream cheese, grapes and almonds (got the grapes and almonds idea from a friend a few years ago)

I do remember having a bigger plan but it was nice outside so I ditched that plan and instead of cooking, I poured a glass of wine and sat on my patio until the sun went down. – Oh come on, it was a better plan. 🙂

As you can imagine, I had a lot of chicken left over.
This is what I used:

Chicken Breast
Hard Boiled Egg – Chopped
Celery – Diced
Almonds (I would have used sliced but had whole so I chopped them)
Grapes (seedless and sliced)
Natures Seasons (personal choice)
Cream Cheese (amount is up to you. I used about 3 Tbsp total)
Oat Nut Bread (again, personal choice. I like the toasted nuts in the bread)


Add the chicken, almonds, egg, celery and seasoning with most of the cream cheese to a bowl. Mix WELL.

Toss in the grapes and stir. I didn’t add these earlier so that they didn’t smash into mush.

Toast the bread and spread a little bit of cream cheese on one piece. Top that piece with arugula, then add the chicken salad and the 2nd piece of bread.

Yes I did just explain how to put together a sandwich. I’m an odd one sometimes.

I ate 1/2 of my sandwich and a few grapes for dinner.

I had PLENTY of chicken salad left over for lunch the next day.
Rather than have another sandwich, I put the chicken salad over a baby lettuce mix and had a few multigrain crackers with it.

2 meals done in minutes!
