Yes, it’s still “Damn Chicken”.
On day 3, I really had no idea what I was going to do. I got home from work, got comfortable and then I stood in the kitchen staring into the cabinet and finally said “what the heck, let’s see what happens”.
This is what happened:
I had crispy little cakes of yummy.
I cooked some quinoa in chicken stock and let it cool.
Cut up 4 pieces of bacon and cooked it in a pan then added about 3 cups of spinach. Cooked the spinach until fully wilted.
Added garlic powder and pepper. (to taste)
Chop about 1 cup of cooked chicken.
Add 1 Cup Cooked Quinoa and the chicken to the spinach and bacon. Mix well and form into little cakes.
little note: My quinoa was a little “wet” and with that and the spinach, I didn’t need any additional “Binder” to form the cakes.
Heat some olive oil in a pan and over medium heat and warm through. The outside will get a little crispy and yummy.
You can also put under the broiler for a few minutes on each side.
Simple and delicious.
Makes 6 to 8 little cakes or you can put it in a baking dish and heat in the oven and serve as a side. (not in “cake” form)
Keep in mind that this weeks dishes really are a “Let’s See What Happens” kind of thing.
I’m cooking for one and still have leftovers so adjust all of the amounts to your needs. Feeding 1, 2, 3…. or serving as a side rather than a main…… All of these things will change the ingredient amounts.
